Southwest Mango Black Bean Quinoa Salad

Ingredients

olive oil &  vinegar

black beans

bell pepper

mango

quinoa

herbs

corn

honey

spices

shallot

Cook the quinoa with the spices

Cook until the quinoa has absorbed all the water and has a fluffy texture. Fluff with a fork for doneness.

2. Make the dressing

Blend all the ingredients until smooth. Season to taste with kosher salt, and freshly cracked black pepper.

3. Mix everything  in a large bowl.

Pour the dressing over the top and toss to combine. Let chill for 30 minutes before serving for the best flavor.
