Mango Corn Salsa

bell pepper

jalapeño

fresh corn

ripe mango

olive oil

fresh lime juice & zest

1. Cook the corn

Heat a large skillet over medium to medium-high heat with the olive oil. Add the corn kernels and spices. Cook stirring often for 3-4 minutes then let cool completely.

2. Combine

Combine the rest of the ingredients in a large bowl. Toss until well combined and season to taste with kosher salt, black pepper, and more lime juice as needed.
