Pat the fillets dry with a paper towel and place salmon skin side down on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
Add the oranges to the same baking sheet and rub with olive oil. Bake until the salmon is cooked through and the oranges are soft.
Scoop out the orange flesh and add it to the base of a blender with the rest of the ingredients. Blend until smooth. Season to taste with salt and black pepper.
Serve the cooked salmon fillets on a bed of leafy greens with sliced avocado, cherry tomatoes, and diced mango. Toss with the dressing just before serving.
