Whisk together the slurry ingredients in a small bowl. Add all the sauce ingredients to a medium bowl and pour in the slurry. Whisk to combine and set it aside.
Heat a large skillet over medium heat with avocado or olive oil. Add the vegetables into the hot pan and cook for 2-3 minutes until lightly cooked.
Cook the ground chicken until no pink remains. Season with kosher salt and a few cracks of black pepper. Remove from the skillet using a slotted spoon.
Pour the sauce into the skillet and allow it to reduce for a few minutes to thicken, stirring frequently. Stir the cooked chicken into the teriyaki sauce and remove from the heat.
Place rice in the bottom of a bowl followed by the cooked chicken and vegetables on top, drizzling extra sauce over the top. Garnish with toasted sesame seeds.
