Homemade oven baked onion rings have a perfectly crispy exterior and are tender in the middle. They're made with just a few simple pantry ingredients. This recipe is dairy free and egg free, and can easily be made gluten free.
Preheat the oven to 450ºF and line a baking sheet with parchment paper. Set aside.
In a medium bowl, whisk together the dairy free milk and flour together until smooth. In a shallow bowl, mix the breadcrumbs and seasonings until well combined.
Fully submerge the onion slices in the wet batter. Lightly shake off the excess batter using a fork, then dip it into the panko mixture.
Arrange the onion rings in a single layer on the prepared baking sheet. Spray the tops of the onion rings with oil and bake for 16 minutes, or until golden brown (they'll have varying shades of brown).

Make It Your Way: Substitutions & Variations
Make gluten free onion rings - use chickpea flour (also called garbanzo bean flour or besan) or gluten-free all purpose - just be careful, as some brands have milk powder in them. Aleia’s is my favorite brand for gluten free and dairy free breadcrumbs. It tastes identical to traditional panko.No panko breadcrumbs? - you can pulse corn flakes in a food processor like my air fryer hot honey chicken tenders for a similarly crispy coating.Switch up the spice mixture - use other seasonings such as chili powder, different dried herbs, garlic salt, etc.
