Beef burrito bowls are easy to make, full of flavor, and endlessly customizable. This version skips the dairy but keeps everything you love: seasoned beef, tender rice, fresh toppings, and a creamy sauce that brings it all together.
Saute the veggies. Heat a large skillet over medium-high heat with some olive oil. Once hot, saute the bell peppers and onion for 4-5 minutes until softened, stirring occasionally. Season with a pinch of salt and remove from the pan but keep covered.
Cook the beef. Reduce to medium heat and add the ground beef. Cook until no pink remains then stir in the taco seasoning and tomato paste. Cook for an additional 1-2 minutes to build the flavor and then take off the heat.
Prep the toppings. Rinse the black beans, chop the lettuce, etc.
Assemble the bowls. Start with rice, add seasoned beef, then layer on your toppings and drizzle with sauce.
