  • 1 tablespoon olive oil
  • ½ small yellow or red onion cut into cubes (large dice)
  • 2 bell peppers, any color cut into cubes

Seasoned Ground Beef

Bowls

Instructions

  • Saute the veggies. Heat a large skillet over medium-high heat with some olive oil. Once hot, saute the bell peppers and onion for 4-5 minutes until softened, stirring occasionally. Season with a pinch of salt and remove from the pan but keep covered.
  • Cook the beef. Reduce to medium heat and add the ground beef. Cook until no pink remains then stir in the taco seasoning and tomato paste. Cook for an additional 1-2 minutes to build the flavor and then take off the heat.
  • Prep the toppings. Rinse the black beans, chop the lettuce, etc.
  • Assemble the bowls. Start with rice, add seasoned beef, then layer on your toppings and drizzle with sauce.
