This dairy-free french toast recipe makes a delicious breakfast, is a great way to use up stale bread, and can easily be made gluten-free. It's so good, you won't even know it's dairy-free.

Ingredients
 

  • 2 large eggs
  • cup unsweetened non-dairy milk of choice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 4 slices bread of choice 5-6 pieces gluten-free bread if it's smaller

Instructions

  • Heat a large skillet over medium heat.
  • In a shallow bowl, whisk together the eggs, plant-based milk, cinnamon, and vanilla.
  • Dredge each piece of bread into the egg mixture until each piece is thoroughly soaked.
  • Once the pan is hot, add 1-2 tablespoons of oil or vegan butter and swirl it around to coat the bottom of the pan.
  • Cook each piece until the bread is golden brown and crispy on both sides.
  • Enjoy with fruit and maple syrup.
