This dairy-free french toast recipe makes a delicious breakfast, is a great way to use up stale bread, and can easily be made gluten-free. It's so good, you won't even know it's dairy-free.

Ingredients

cup
unsweetened non-dairy milk of choice
1
teaspoon
ground cinnamon
½
teaspoon
vanilla extract
4
slices
bread of choice
5-6 pieces gluten-free bread if it's smaller
Instructions
Heat a large skillet over medium heat.
In a shallow bowl, whisk together the eggs, plant-based milk, cinnamon, and vanilla.
Dredge each piece of bread into the egg mixture until each piece is thoroughly soaked.
Once the pan is hot, add 1-2 tablespoons of oil or vegan butter and swirl it around to coat the bottom of the pan.
Cook each piece until the bread is golden brown and crispy on both sides.
Enjoy with fruit and maple syrup.
