Homemade ginger simple syrup has sweet and spicy notes and a strong ginger flavor. It's a delicious way to sweeten non-alcoholic drinks, classic cocktails, tea, and more!
Dissolve sugar. Heat the water and sugar in a small saucepan over medium-high heat, and stir until the sugar dissolves.
Simmer. Reduce the heat to a simmer, add the fresh ginger pieces, and simmer for 15 minutes while stirring occasionally. Transfer the infused simple syrup with ginger to a blender.
Blend. Blend until completely smooth then pour the syrup through a fine-mesh strainer into a bowl. Let cool to room temperature then chill in the fridge before using.
