Lime simple syrup is a nice balance of sweet and tart. All you need are just 2 ingredients and you’ll have a delicious lime syrup to add to mocktails, cocktails, lattes, and more!
Zest. Scrub and dry the limes, then use a microplane zester to remove the zest from 2 of the limes. Set the lime zest aside.
Juice. Once you've removed zest, juice the limes until you've reached ½ cup. You'll need about 4 limes.
Dissolve sugar. Combine freshly squeezed lime juice, water, and sugar in a small saucepan over medium-high heat. Stir until the sugar dissolves then add in the lime zest.
Simmer & strain. Cook the lime syrup over medium-low heat for 5 minutes then pour the syrup through a fine mesh strainer into a jar. Discard the zest.
Cool and store. Let the syrup cool to room temperature before adding a tightly sealed lid and storing in the fridge.
