Strawberry & Grapefruit Popsicles

Strawberry popsicles with grapefruit are slightly sweet, a little tart, and made with just 3 simple ingredients. Plus, they're so refreshing on a hot summer day!

Ingredients
 

  • 3 cups fresh strawberries or thawed frozen strawberries
  • cup freshly squeezed grapefruit juice from 1 large grapefruit
  • 2-3 tablespoons maple syrup or substitute, see blog post

Instructions

  • Blend. Add the strawberries, grapefruit juice, and maple syrup to a blender. Blend until smooth. Taste and add more sweetener if needed.
  • Pour. Pour the strawberry mixture into your popsicle molds, filling them ¾ of the way full.
  • Freeze. If using wooden sticks, freeze the popsicles for an hour first before you insert the sticks. This will help keep them in place. Then put them back in the freezer until completely frozen, at least 6 hours or overnight.
