Mix. Combine all the ingredients together in a large bowl until evenly distributed. Season to taste with kosher salt.
Chill and serve. Let chill for at least 20 minutes for the best flavor. Serve with tortilla chips or as a topper for tacos, bowls, burgers, grilled fish or chicken, etc.

No roma tomatoes? - use another variety such as beef steak, vine, campari, heirloom, etc.No jalapeno pepper? - use another type of pepper. If you don't like spice, you can use a bell pepper for added flavor. I'd use red or orange.No yellow onion? - you can also use red onion or shallot.Don't like cilantro? - use flat leaf parsley, chives, or omit completely.
