10 Minute Blueberry Toast

Blueberry toast with a quick blueberry compote, dairy free yogurt, and fresh lemon zest and slices of sourdough toast.
Blueberry toast makes a delicious breakfast or snack. It's made with jammy blueberries, lemon zest, and plain yogurt on a toasted slice of your favorite kind of bread. This recipe is dairy free and gluten free.

Ingredients
 

  • 1 ½ cups fresh blueberries
  • 1 tablespoon maple syrup or honey
  • zest of 1 lemon reserved for serving
  • 1 tablespoon lemon juice
  • ¾ cup unsweetened plain coconut yogurt
  • 4 slices bread of choice toasted

Instructions

  • Combine blueberries, maple syrup, and lemon juice in a small saucepan over medium heat.
  • Once the blueberry mixture comes to a simmer, reduce to medium-low heat and cook for 5 minutes, stirring occasionally until the compote has thickened and easily coats the back of a spoon.
  • Smear yogurt on top of the toasted bread slices followed by spoonfuls of the syrupy blueberries and a sprinkle of lemon zest over the top.

Make It Your Way: Substitutions & Variations

No yogurt? - you can also use any creamy spread such as dairy free cream cheese, or peanut butter or seed butter for a fresh spin on a PB&J.
Not dairy free? - use Greek yogurt, a thin layer of goat cheese, cream cheese, or even cottage cheese.
Add-ins - hemp seeds, chia seeds for healthy fats and to make it more satiating, or make my 10 minute blueberry chia jam instead.

Variations

Use another type of fruit - make raspberry compote or cherry compote instead.
Make blueberry ricotta toast - use almond or cashew ricotta cheese.
