Blueberry toast makes a delicious breakfast or snack. It's made with jammy blueberries, lemon zest, and plain yogurt on a toasted slice of your favorite kind of bread. This recipe is dairy free and gluten free.
Combine blueberries, maple syrup, and lemon juice in a small saucepan over medium heat.
Once the blueberry mixture comes to a simmer, reduce to medium-low heat and cook for 5 minutes, stirring occasionally until the compote has thickened and easily coats the back of a spoon.
Smear yogurt on top of the toasted bread slices followed by spoonfuls of the syrupy blueberries and a sprinkle of lemon zest over the top.
