Preheat the oven to 425ºF and line a baking sheet with parchment paper. If using wooden skewers, soak them in warm water for 15-20 minutes while you prepare the chicken so they don't burn in the oven.
Mix the olive oil, seasonings, and cubed chicken in a large bowl until evenly coated.
Make the sauce by whisking the ingredients together then transfer 1/4 cup of the sauce to a separate bowl to brush the raw chicken with.
Thread the seasoned chicken cubes onto the skewers then place them on the lined baking sheet with a little space in between. Bake for 13-15 minutes, brushing both sides of the chicken skewers with the reserved bang bang sauce halfway through.
The chicken is done when the internal temperature reaches 165ºF. If want your chicken pieces to have more charring or golden brown edges. Place them under the broiler for 1-2 minutes, watching carefully so they don’t burn.
Remove from the oven, brush with more bang bang sauce, top with green onions, and serve immediately.
