Baked Bang Bang Chicken Skewers

Bang bang chicken skewers on a serving platter topped with sliced green onions next to a bowl of rice and bang bang sauce.
Baked bang bang chicken skewers are seasoned and baked until tender then brushed with a flavorful homemade bang bang sauce. This recipe is dairy free and gluten free.

Ingredients
 

Bang Bang Sauce

  • ½ cup mayonnaise
  • cup Thai sweet chili sauce
  • 1-2 tablespoons sriracha hot sauce depending on preference
  • 1 teaspoon rice vinegar

Other

  • wooden or metal skewers
  • sliced green onions to garnish

Instructions

  • Preheat the oven to 425ºF and line a baking sheet with parchment paper. If using wooden skewers, soak them in warm water for 15-20 minutes while you prepare the chicken so they don't burn in the oven.
  • Mix the olive oil, seasonings, and cubed chicken in a large bowl until evenly coated.
  • Make the sauce by whisking the ingredients together then transfer 1/4 cup of the sauce to a separate bowl to brush the raw chicken with.
  • Thread the seasoned chicken cubes onto the skewers then place them on the lined baking sheet with a little space in between. Bake for 13-15 minutes, brushing both sides of the chicken skewers with the reserved bang bang sauce halfway through.
  • The chicken is done when the internal temperature reaches 165ºF. If want your chicken pieces to have more charring or golden brown edges. Place them under the broiler for 1-2 minutes, watching carefully so they don’t burn.
  • Remove from the oven, brush with more bang bang sauce, top with green onions, and serve immediately.

Make It Your Way: Substitutions & Variations

No chicken breasts? - you can use boneless skinless chicken thighs but you'll need to cook them a little longer.
No sriracha? - use another kind of hot sauce.
No rice vinegar? - sub fresh lime juice.
Make spicy bang bang chicken skewers - give it more of a spicy kick by adding cayenne pepper to the seasoning blend and/or more sriracha or red pepper flakes to the sauce.
Make bang bang shrimp - use large shrimp instead of chicken and cook for 5-7 minutes or until cooked through.
