Green apple mocktail is a non-alcoholic drink with fresh green apple juice and a homemade lemon ginger simple syrup. It's the perfect balance of tart and sweet and is extra refreshing on hot days.

Ingredients
 

Lemon Ginger Simple Syrup

  • organic lemon peel from 1 lemon white pith removed
  • ¼ cup fresh lemon juice
  • ¼ cup water
  • ½ cup organic cane sugar
  • ½ cup sliced fresh ginger

Green Apple Juice

  • 2 green apples sliced or chopped
  • ½ cup filtered water
  • squeeze of lemon juice

Green Apple Mocktail

  • ¼ cup green apple juice 2 ounces
  • 2 tablespoons lemon ginger syrup 1 ounce
  • handful of ice cubes
  • sparkling water

Instructions

  • Make lemon ginger syrup. Use a vegetable peeler to remove thin strips of lemon peel. Set aside. Cut the lemon in half and squeeze out the juice (you’ll need 2 small lemons to get the right amount). Add the lemon juice, water, and sugar to a small saucepan over medium-high heat, stirring constantly until the sugar dissolves.
  • Simmer. Reduce to medium-low heat, then add the fresh ginger pieces and lemon peel. Simmer for ten minutes while stirring occasionally, then remove from the heat.
  • Strain syrup. Run the syrup through a fine mesh strainer to remove the peels and sliced ginger. Let cool completely before putting the lid on and storing.
  • Blend. Add the green apple slices, water, and a squeeze of lemon juice to a high-speed blender. Blend until smooth, then run through a fine mesh strainer, pushing against the pulp with the back of a spoon to get as much juice out as possible.
  • Assemble drink. Mix the tart apple juice and lemon ginger simple syrup in the bottom of a lowball glass until well combined. Add ice and fill the glass the rest of the way with sparkling water. Garnish with a lemon peel or piece of sliced ginger from the syrup.

Notes

The recipe makes ½ cup + 1 tablespoon lemon ginger simple syrup and 1 cup of green apple juice.

Make It Your Way: Substitutions & Variations

No fresh apples? - use apple cider or green apple juice if you can find it. Apple cider will be sweeter so you can either add in fresh lemon juice to balance it out or use less syrup.
No lemons? - you can also use lime juice.
Try a different sweetener - use honey or maple syrup in place of the organic cane sugar for the simple syrup. Just don't use them as a stand-alone ingredient because otherwise, they won't mix into the mocktail.
Use infused soda water - instead of plain soda water, lemon-lime soda or another flavor would be delicious.
