Honey Ginger Dressing

A jar of homemade creamy honey ginger salad dressing.
Honey ginger dressing is a delicious dressing with zingy Asian flavors. It has a subtle spiciness from the fresh ginger, sweetness from the honey, and tanginess from the vinegar. This easy recipe is dairy free.

Ingredients
 

  • cup avocado or olive oil
  • ¼ cup rice vinegar
  • 2 tablespoons honey
  • 2 inch knob fresh ginger, peeled and grated 1 heaping tablespoon grated
  • ½ teaspoon diamond crystal kosher salt plus more to taste, start with ¼ teaspoon if using anything else
  • ¼ teaspoon white pepper or black pepper

Instructions

  • Add all the ingredients to a blender and blend until smooth. Season to taste with more kosher salt if needed.

Makes about 3/4 cup of dressing.

Make It Your Way: Substitutions & Variations

No rice vinegar? - use white wine vinegar, champagne vinegar, or apple cider vinegar. You can also use lime juice or lemon juice in a pinch.
No honey? - you can also use maple syrup but it'll change the flavor of the dressing. Maple syrup isn't as emollient as honey, so you may need to add a squeeze of Dijon mustard to help the dressing emulsify.
No fresh ginger? - you can also use ginger paste from a tube or jar but don't use ground ginger.
No white pepper? - black pepper is fine.
Add-ins - a tablespoon of reduced sodium soy sauce or tamari or a splash of toasted sesame oil for a slightly different flavor profile.
