Loaded Ground Turkey Nachos (Dairy Free)

A sheet pan of loaded ground turkey nachos with jalapeno slices, sliced green onions, diced red bell pepper, and a side of salsa.
Ground turkey nachos make a great dinner, filling snack, or game day appetizer. They're loaded with all the fixings: beans, seasoned turkey meat, and fresh vegetables, but can easily be customized to include your favorite toppings. The whole family will love this easy recipe.

Ingredients
 

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ yellow onion diced
  • 1 pound ground turkey
  • 15.5 ounce can black beans drained and rinsed
  • 2 ½ tablespoons taco seasoning
  • 7.5 ounce bag of tortilla chips
  • 2.5 cups dairy free shredded cheddar cheese I used Miyoko's, but use whatever you like
  • 1 medium red bell pepper diced
  • cup pickled jalapeno slices to taste
  • sliced green onions

Extras (optional)

  • salsa of choice
  • sour cream or plain dairy free yogurt

Instructions

  • Preheat oven to 400ºF/200ºC.
  • Heat a large skillet over medium heat with olive oil. Cook the onion and minced garlic for 2-3 minutes, stirring often. Add the ground turkey and cook until no pink remains then add in black beans and taco seasoning. Cook for 1-2 more minutes then remove the skillet from the heat.
  • Spread the tortilla chips in a single layer, slightly overlapping the edges of the chips, on a rimmed baking sheet (I used a quarter sheet pan).
  • Sprinkle half of the cooked turkey mixture across the chips followed by shredded cheese. Repeat with another layer until you've used up all the filling and cheese (if using a half sheet pan, you'll only have one layer). Bake for 8-10 minutes until the cheese has melted.
  • Add chopped bell peppers, pickled jalapeno slices, sliced green onions, or any other toppings if desired.

Make It Your Way: Substitutions & Variations

No ground turkey? - you can also use lean ground beef or ground chicken.
Make it vegetarian/vegan - use crumbled tofu in place of the meat for extra protein or use all beans.
Don't like spicy food? - use mild sliced green chiles instead of jalapenos or omit them completely.
Add-ins - red onion, cubed avocado or guacamole, sliced black olives, red pepper flakes, pico de Gallo or salsa, sour cream or plain yogurt, thinly chopped romaine lettuce, diced tomatoes, fresh cilantro, etc.
Variations
Serve with nacho cheese - these nachos are delicious with my green chile cashew queso instead of shredded cheese. If you go this route, you don't need to bake the nachos. Just assemble them and serve.
