Strawberry apple crumble is the perfect summer dessert made with ripe strawberries, sweet apples, and a crispy topping. This easy strawberry crisp is dairy free, nut free, vegan, and can easily be made gluten free.
Preheat the oven to 350ºF and grease an 8x8 or 9x9 baking pan or 9-inch pie dish.
Mix the sliced strawberries, apple slices, brown sugar, potato starch, lemon juice, ground cinnamon, and a pinch of salt in a large bowl until combined. Transfer the fruit filling to the prepared pan and spread into a somewhat even layer.
In a medium bowl, combine the dry ingredients: oats, flour, brown sugar, cinnamon, and salt. Mix until combined, then stir in the melted butter and vanilla until the mixture forms clumps and has a sandy texture.
Sprinkle the crisp topping over the top of the fruit mixture. Bake for 45 minutes or until the strawberries have started to bubble up and the topping is golden brown.
Allow to cool then top with a scoop of dairy free vanilla ice cream if desired.
