Here’s what you’ll need to make arugula and prosciutto pizza:

  • Herb infused olive oil sauce – olive oil, garlic cloves, and fresh herbs (I used fresh rosemary and thyme sprigs).  
  • Homemade pizza dough – my pizza dough recipe makes enough for 4 large thin-crust pizzas or 6 personal-size pizzas. I typically use half of the dough and freeze the other half for later to use on a night when I don’t have as much time.
  • Mozzarella cheese – dairy free or dairy mozzarella if not dairy free. For dairy free, I love my dairy free mozzarella cheese or storebought dairy free mozzarella shreds.
  • Prosciutto.
  • Figs – I used mission figs, but any variety is fine.
  • Fresh arugula – the spicy, peppery flavor complements the other flavors for a perfect balance.
  • Honey and red pepper flakes – for garnish.

How To Make Fig and Prosciutto Pizza: Step By Step

1. Make the herb-infused olive oil. Add fresh rosemary sprigs, thyme sprigs, smashed garlic cloves, and olive oil to a small saucepan over medium-low heat. Let cook for 4-5 minutes. Remove from the heat and set aside.

2. Lightly dress arugula. Use your hands to toss arugula with a little bit of olive oil in a large bowl. Set aside. 

3. Assemble and cook. Roll out the pizza dough on a lightly floured surface, brush the top of the dough with the herb oil, followed by your cheese of choice, then add small pieces of torn prosciutto, and fig slices. Bake at 500ºF for 7-10 minutes or until golden brown.

4. Add additional toppings. Remove the hot pizza from the oven. Add a handful of arugula, a drizzle of honey, and red pepper flakes (if using) to the top of the pizza.

Helpful Tips

  • Make it quicker – use store-bought pizza dough.
  • If you make the pizza dough ahead of time, let it come to room temperature before trying to roll it out. A warmer dough helps the gluten relax which makes it easier to roll out.

Quick Tip: If it isn’t fig season, use dried figs, but soak them in water first to rehydrate them. Alternatively, you can add dollops of a fig spread or fig jam.

Once it comes to temperature, take it out and generously sprinkle the pan with flour or cornmeal before carefully transferring the rolled-out dough onto it. Once the dough is on the pan, add the sauce and toppings.

Where can I find fresh figs?

You can typically find fresh figs at Trader Joe’s or Asian markets before they show up at your local grocery store. Figs are in season from June through October.

Can you eat prosciutto raw?

Storebought prosciutto is salt cured which draws out moisture that prevents bacteria from forming. This is why it’s safe to eat prosciutto straight out of the package.

Can I use tomato sauce instead?

While you can use traditional pizza sauce or tomato sauce, the herb-infused olive oil lightens it up and pairs more nicely with the other flavors.

  • ¼ cup olive oil
  • 3 garlic cloves peeled and lightly smashed
  • fresh rosemary sprigs
  • fresh thyme sprigs

Instructions

  • Preheat your oven to 500ºF. If using the inverting rimmed baking sheet method, place it in the oven now to preheat it. Otherwise, preheat your pizza stone.
  • Make the herb-infused olive oil. Add fresh rosemary sprigs, thyme sprigs, smashed garlic cloves, and olive oil to a small saucepan over medium-low heat. Let cook for 4-5 minutes. Remove from the heat and set aside.
  • Lightly dress arugula. Use your hands to toss arugula with 1-2 teaspoons of olive oil in a large bowl. Set aside. 
  • Pizza stone and pizza peel method: Roll out the pizza dough on a lightly floured surface. Brush the top of the dough with the herb oil, followed by your cheese of choice, then add small pieces of torn prosciutto, and fig slices. Bake for 7-10 minutes or until golden brown.
  • No pizza stone method: Roll out the pizza dough on a lightly floured surface. Once the oven and baking sheet have come to temperature, carefully remove the baking sheet from the oven and place it on top of the stove. Sprinkle the surface with flour or cornmeal. Carefully transfer your rolled-out dough onto the floured surface, then brush with the infused olive oil followed by the toppings. Just be careful because the pan is really hot, so don't forget to use oven mitts when you put it in the oven. Bake for 7-10 minutes or until golden brown.
  • Add additional toppings. Remove the hot pizza from the oven. Add a handful of arugula, a drizzle of honey, and red pepper flakes (if using) to the top of the pizza. Cut into slices and enjoy!
