  • Fresh basil
  • Creamy Italian dressing – unsweetened plain dairy free yogurt, mayo, red wine vinegar, nutritional yeast, Italian seasoning, kosher salt, and freshly ground black pepper.

  • ¾ cup oil packed sun dried tomatoes minced
  • â…” cup diced bell pepper red, orange, or yellow
  • â…“ cup fresh basil chopped

  • Make salad. In a large bowl, combine shredded chicken, chopped sun dried tomatoes, diced bell pepper, and fresh basil.
  • Make dressing. In a small bowl, whisk together the dressing ingredients until smooth. Season to taste with kosher salt and freshly ground black pepper.
