How can you make this baked pumpkin oatmeal recipe using what you already have? Here are some ideas…

  • No pumpkin? – you can also use pureed butternut squash or sweet potato.
  • No avocado oil? – use olive oil or melted dairy free (or unsalted) butter.
  • No pumpkin pie spice? – use 1 teaspoon of ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground cloves, and ¼ teaspoon ground nutmeg. For the glaze, use all ground cinnamon.
  • Make it gluten-free – use certified gluten free oats so there’s no cross contamination.
  • Add-ins – ½ cup of toasted pecans or walnuts would add a nice textural contrast.
  • Don’t skip the maple yogurt glaze. It helps tie all the flavors together. Plus, the baked oatmeal isn’t sweet enough on its own.
  • This baked pumpkin oatmeal can be eaten warm or cold, but avoid cutting into it when it’s still piping hot, otherwise it won’t hold its shape.
