How To Make Cucumber Mocktail: Step By Step

  1. Combine water, lime juice, and sugar in a small saucepan over medium-high heat. Stir until the sugar dissolves, then add the jalapeno slices.
  2. Cook the infused simple syrup over low heat for 10 minutes then pour the syrup through a fine mesh strainer. Let cool then store in the fridge for at least an hour before using.
  3. Add cucumber slices, water, fresh mint leaves, lime zest, and lime juice to a blender. Blend on high until smooth, then pour the cucumber puree through a fine mesh strainer to remove the pulp.
  4. Mix the cucumber juice and jalapeno lime syrup in the bottom of a lowball glass until combined.
  5. Add ice and fill the glass the rest of the way with sparkling water. Serve with a lime wedge, sprig of mint, or cucumber ribbons.

  • Avoid cooking the syrup over high heat as you can burn the syrup, which will ruin the flavor.
  • This syrup isn’t as sweet as simple syrups with a 1:1 sugar-to-water ratio, so depending on how sweet you like your drinks, you may want to add a bit more simple syrup to each mocktail.
  • Get as much juice out of the cucumber puree as you can. You can either use the back of a spoon to press against the pulp in a fine mesh strainer or pour it through a nut milk bag and squeeze out the juice.

Jalapeno Lime Simple Syrup

Cucumber Mint Lime Juice

  • 3 Persian cucumbers or 1 English cucumber cut into thick slices
  • ¼ cup water
  • ¼ cup fresh mint leaves
  • zest of 1 lime
  • 2 tablespoons lime juice

Cucumber Mocktail

  • ¼ cup cucumber mint lime juice 2 ounces
  • 1-2 tablespoons jalapeno simple syrup ½ – 1 ounce
  • ice cubes
  • sparkling water

Garnish (Optional)

  • lime wedges
  • cucumber ribbons
  • sprig of mint
