- Combine water, lime juice, and sugar in a small saucepan over medium-high heat. Stir until the sugar dissolves, then add the jalapeno slices.
- Cook the infused simple syrup over low heat for 10 minutes then pour the syrup through a fine mesh strainer. Let cool then store in the fridge for at least an hour before using.
- Add cucumber slices, water, fresh mint leaves, lime zest, and lime juice to a blender. Blend on high until smooth, then pour the cucumber puree through a fine mesh strainer to remove the pulp.
- Mix the cucumber juice and jalapeno lime syrup in the bottom of a lowball glass until combined.
