  • Extra virgin olive oil – use a high quality, good olive oil
  • Balsamic glaze (optional) – only use if your peaches aren’t too sweet.
  • Flaky salt & freshly ground black pepper – to taste.

  • You really don’t need a recipe. You can use however many peaches or mozzarella slices you’d like. You just want to make sure that each stack has a peach slice, mozzarella slice and fresh basil so you get all three flavors in one bite.

Quick Tip: The best peaches to use are just barely ripe. This will ensure the peach slices can hold their shape and aren’t too mushy.

Storage

This salad is best enjoyed fresh. 

If you’ve sliced the peaches ahead of time, store them in an airtight container and squeeze with a little lemon juice over the time to prevent them from oxidizing. Consume the following day.

Store the mozzarella in a separate airtight container. Wait to assemble until just before serving.

If your peaches are really sweet, I don’t recommend using the glaze, otherwise the salad ends up tasting too sweet overall.
