1. In the bottom of a large bowl, whisk together the vinegar, sugar, celery seed, kosher salt, and black pepper. Stir until the sugar has dissolved.

2. Add the chopped tomatoes and fresh herbs. Season to taste with more salt or pepper as needed. Stir to combine then transfer the tomato mixture and juices to an airtight jar or glass container. Let chill for 1-2 hours before serving for the best flavor.

Tomato chutney is typically slow-cooked until the ingredients become very soft and broken down whereas tomato relish is cooked quickly to retain its texture.

Although some relish is cooked gently on the stove, I find it not to be necessary for tomato relish because the vinegar tenderizes the tomatoes, which softens their texture.

Ingredients
 

  • ¼ cup red wine vinegar
  • 2 tablespoons organic cane sugar or white sugar
  • ½ teaspoon celery seed
  • ½ teaspoon diamond crystal kosher salt plus more to taste, start with ¼ teaspoon if using anything else
  • couple cracks of freshly ground black pepper to taste
  • 1 ¼ pounds fresh tomatoes – any variety cut into small pieces (about 3.5 cups of whole cherry tomatoes)
  • cup sliced fresh chives
  • cup fresh dill minced
