Ground Beef Soft Tacos

Beef soft tacos are a quick dinner option with endless customizable variations. They’re filling, easy to make, and come together in 20 minutes. Dairy free and gluten free if using corn tortillas.

Ingredient Notes

  • Garlic
  • Yellow onion – could also use white onion.
  • Ground beef
  • Taco seasoning – I like to make a big batch of my DIY taco seasoning so I always have it on hand. It takes 5 minutes to make and is made with spices you likely already have in the pantry.
  • Tomato paste
  • Small flour tortillas
  • Shredded romaine lettuce
  • Dairy free plain yogurt or sour cream
  • Cherry tomatoes

Make It Your Way: Substitutions & Variations

How can you make this beef soft tacos recipe using what you already have? Here are some ideas…

  • No ground beef? – use another type of ground meat such as ground chicken or ground turkey.
  • No romaine lettuce? – you can also use iceberg lettuce or sliced green cabbage.
  • Make it gluten-free – use corn tortillas or gluten free flour tortillas.
  • Add-ins – black beans, fresh or pickled jalapeños, diced avocado or guacamole, shredded cheese, diced bell pepper, pico de gallo, etc.
  • If you’re feeding a crowd, you can bulk up the meat mixture by adding black or pinto beans once the beef has cooked through.
  • Store seasoned ground beef, lettuce, chopped tomatoes, and any other toppings in a separate airtight container in the fridge for up to 5 days. Assemble before serving.
  • Warm your tortillas, either in a skillet or in the microwave for a few seconds before assembling the tacos.

Serving Ideas

Ground beef soft tacos are delicious served with a homemade sauce. I love them paired with my non traditional sauteed green onion pesto or cilantro pesto. I’ll also love it with fresh tomato relish for a pop of color and a fresh, tangy flavor.

If you’re serving them for a party or get together, I like to serve them with a fun drink like a grapefruit Paloma mocktail or blood orange mocktail with hibiscus.

Ingredients
 

Seasoned Taco Meat

Tacos

  • small flour tortillas or corn tortillas for gluten free
  • shredded romaine lettuce
  • cherry tomatoes halved or quartered
  • dollop dairy free plain yogurt or sour cream
  • shredded cheese of choice optional

Instructions

  • Warm the tortillas. You can either do this in a hot skillet or in the microwave. See the package instructions. Transfer the warm tortillas to a plate covered with a kitchen towel. Set aside.
  • Cook the beef. Heat a large skillet over medium heat. cook the onion and garlic until the onion is translucent, then add the ground beef. Cook until no pink remains then stir in the taco seasoning and tomato paste. Cook for an additional 1-2 minutes to build the flavor, then remove from the heat.
  • Assemble the tacos. Place the warm tortillas on a plate. Add a spoonful of the seasoned taco meat followed by shredded romaine lettuce, chopped tomatoes, a dollop of dairy free plain yogurt or sour cream, and any additional topping if desired (see the blog post for ideas).
