Orange Creamsicle Frozen Yogurt Bars

Orange creamsicle bars have a creamy and lightly sweetened yogurt layer with a fresh orange flavor and a graham cracker crust. This delicious recipe can be served as a dessert or snack. Dairy free and gluten free.

Ingredient Notes

Base Layer

  • Graham crackers – or similar. I used honey cinnamon sweet thins by Simple Mills, which are naturally gluten free.
  • Medjool dates – pitted.
  • Refined coconut oil – use refined for no coconut flavor.

Yogurt Layer

  • Full fat unsweetened plain coconut milk – I love the Cocojune brand.
  • Orange zest
  • Freshly squeezed orange juice – this can be from navel oranges, clementines, or mandarin oranges.
  • Maple syrup
  • Vanilla extract

Topping

  • Orange segments – these add a pop of color as well as some texture.

How To Make: Step By Step

  1. Make base layer. Pulse the crust ingredients until a dense sandy mixture forms and there are no large chunks. Press into a parchment paper lined square pan and chill in the fridge while you make the filling.
  2. Make yogurt layer. Blend the yogurt filling until smooth. Taste and add more sweetener if needed. Then pour into an even layer in the slightly chilled crust.
  3. Freeze. Freeze for 30 minutes, lightly press the orange segments into the yogurt layer, then place back in the freezer until completely solid.
  4. Cut into squares. Remove from the pan using the overhang and cut into squares. Enjoy!

How can you make this orange creamsicle bars recipe using what you already have? Here are some ideas…

  • No dates? – you can also use organic cane sugar, white granulated sugar, or coconut sugar.
  • No maple syrup? – you can also use honey.
  • Make it gluten free – either use Simple Mills crackers or gluten free graham crackers.
  • No refined coconut oil? – sub melted vegan butter or unsalted butter if not dairy free.
  • Not dairy free? – use a thick Greek yogurt.
  • The easiest way to cut the bars is to run a sharp knife under hot water and wipe the excess water with a damp cloth. For clean slices, wipe the blade after each cut.
  • Store the orange creamsicle yogurt bars in an airtight container in the freezer until ready to enjoy. Avoid leaving them at room temperature for too long or they’ll melt pretty quickly.
  • Use soft medjool dates. If yours are dry and hard, you’ll either want to soak them in hot water for 5 minutes or use granulated sugar for the crust.

Ingredients
 

Base

Yogurt Layer

  • 1 ½ cups full fat unsweetened plain dairy free yogurt or greek yogurt if not dairy free
  • 1 teaspoon orange zest
  • ¼ cup freshly squeezed orange juice any variety
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract

Topping

  • orange segments I used mandarin oranges

Instructions

  • Make base layer. Add the cinnamon crackers, melted coconut oil, and pitted dates to a food processor and pulse until a dense sandy mixture forms and there are no large chunks.
  • Press into pan. Transfer the mixture to the bottom of a parchment paper lined 8×8 inch pan. Pack it down with the bottom of a cup until an even layer forms. Place in fridge while you make the filling.
  • Make yogurt layer. Add the yogurt, orange zest, orange juice, maple syrup, and vanilla extract to a blender. Blend until smooth.
  • Add filling. Pour the filling over the slightly chilled crust, smoothing it into an even layer.
  • Freeze. Freeze for 30 minutes, then lightly press the orange segments into the yogurt layer. Place back in the freezer for 1 ½ more hours or until the yogurt is frozen solid.
  • Cut and store. Remove the bars from the pan using the parchment paper overhang. Cut the bars into squares and store in the freezer in an airtight container until ready to enjoy!

Notes

Use soft medjool dates. If yours are dry and hard, you’ll either want to soak them in hot water for 5 minutes or sub 3 tablespoons of granulated sugar for the crust.
