- Organic cane sugar – my favorite type of sweetener to use. It’s not as processed as white granulated sugar, isn’t sickly sweet, and dissolves well.
- Water – to dissolve the sugar.

- Dissolve sugar. Heat the water and sugar in a small saucepan over medium-high heat. Constantly stir until the sugar dissolves, then add the strawberries.
- Simmer. Reduce to medium heat and simmer for 10-15 minutes (10 minutes if using fresh strawberries), stirring occasionally.
- Strain. Place a fine mesh strainer over a glass jar and pour the strawberry syrup through. Use the back of a spoon to gently press against the berries to help extract all the syrup.
- Cool and store. Let the syrup cool to room temperature before storing it in the fridge.

- For a stronger strawberry flavor, lightly crush the strawberries with a fork or potato masher to release their juices. Alternatively, you can let the strawberries steep longer before straining.
