Ingredients

Here’s what I used to make this homemade ginger syrup recipe:

  • Organic cane sugar – this is my favorite type of sweetener to use. It isn’t sickly sweet and dissolves well, but you could also use white granulated sugar. I wouldn’t recommend using raw sugar as the granules are too coarse and don’t dissolve as easily.
  • Water – to dissolve the sugar.
  • Fresh ginger root

How to Make Ginger Simple Syrup: Step By Step

  1. Dissolve sugar. Heat the water and sugar in a small saucepan over medium-high heat, and stir until the sugar dissolves.
  2. Simmer. Reduce the heat to a simmer, add the fresh ginger pieces, and simmer for 15 minutes while stirring occasionally. Transfer the infused simple syrup with ginger to a blender.
  3. Blend. Blend until completely smooth then pour the syrup through a fine-mesh strainer into a bowl. Let cool to room temperature then chill in the fridge before using.

Helpful Tips

  • Blending the ginger slices with the syrup gives it a more intense ginger flavor.
  • For a less spicy flavor, either reduce the amount of ginger or increase the amount of sugar to 1 cup total.
  • This syrup isn’t as sweet as simple syrups with a 1:1 sugar-to-water ratio, so you may need to use a bit more in drinks depending on personal preference.
  • Using a dark sweetener such as maple syrup, brown sugar, or coconut sugar will alter the color of the syrup.
  • Use a larger fine mesh strainer if you can. There’s a lot of ginger pulp and it makes it a lot easier than using a small one. I used this size.

Quick Tip: Make the ginger simple syrup ahead so it has time to chill before using.

Storage

Fridge: Store in an airtight container or mason jar in the fridge for up to 3 weeks.

Freezer: To make it last longer, pour the syrup into silicone ice cube trays. Once frozen, pop them into a freezer-safe bag where they’ll last for up to 6 months.

  • ¾ cup organic cane sugar or white granulated sugar
  • ¾ cup peeled fresh ginger root cut into large chunks

Instructions

  • Dissolve sugar. Heat the water and sugar in a small saucepan over medium-high heat, and stir until the sugar dissolves.
  • Simmer. Reduce the heat to a simmer, add the fresh ginger pieces, and simmer for 15 minutes while stirring occasionally. Transfer the infused simple syrup with ginger to a blender.
  • Blend. Blend until completely smooth then pour the syrup through a fine-mesh strainer into a bowl. Let cool to room temperature then chill in the fridge before using.
